Of course you can…it’s very common. Transom eyes were in use LONG before any of the other stuff was ever thought of.
Simply get a ski tow harness…either the fixed point in the middle, or one that has a pulley that will run back and forth and prevent excessive pull on one eye or another.
You might consider going a little farther by putting a float near the end of the rope…that way it helps to keep the ropes out of the prop. For one reason…you can see it easier.

you get a rope with clips the right length. clip it on each side of the boat at the rear. the rope should be short enough that it will not sink down to the propeller .
next you need a ski rope and hook up . that is just a long rope with a loop on it attached to the first rope at the rear of the boat. the other end has a handle.
you can attach floats to the ropes that are near to the boat so you never have to worry about them sinking .

good advice above. it’s a standard device. floats and clips and line for the brackets. then the ski rope attaches to it. God i’m old. been doing that for 44 years!

Yup, I’m just about to attach 2 stainless u bolts either side of the transom on my wee fast fisher for towing a tube and to try wakeboarding.
The piece of rope you attach to the tow points is called a bridal. Check the well known auction site.
